Home     Sweets: Chocolate Zucchini Cake                                                                                          
Cake:                                                                                                                  Preheat Oven: 350 degrees
1 pkg.  Devil's food chocolate cake mix
2 c. Zucchini, shredded
3 large Eggs
1/2 c. Buttermilk
1/2 c. Vegetable oil
1 tsp. Ground cinnamon
1/4 tsp. Ground allspice

Combine all ingredients in a large mixing bowl. Blend at low speed with an electric mixer until all ingredients are wet, increase to high for 2 minutes. Pour into a greased and floured single sized baking pan and bake for 35-40 minutes in a 350 degree oven. Remove from oven and allow to cool.
Cream Cheese Frosting:
4 oz. Cream cheese, softened
2 Tbsp. Butter or margarine
1/2 tsp. Vanilla
1 1/2 c. Confectioner's sugar

Combine cream cheese, butter and vanilla. Beat with electric mixer until light and fluffy. Gradually add confectioner's sugar until fully incorporated. Frost cake. Refrigerate.
