Home     Main Courses: Slow Cooker Pot Roast                                                                                          
                                                                                                        Cooking Time: Low-8 hours High-5 hours
3 lb. Chuck Roast with good marbling 2" thick
3 medium Onions, cut into medium slices
4 large Carrots, cut into 1/2 inch pieces
3 large Yams, cut into 1/2 inch rounds skin on
1 pkg. Onion soup mix
1 large Bay leaf
1/2 c. Water
Evenly distribute carrots, onions and yams on bottom of slow cooker, standing some on edge as needed. Put bay leaf in middle of pot. Sprinkle half of the dried onion soup mix over all of the vegetables. Lay roast on top of vegetables and sprinkle remaining soup mix on top. Pour water down side of cooker. Cover cooker and turn on to desired heat. Low setting for 8 hours, High setting for 5 hours.

NOTE: I have one of the newer oval crock pots, but this recipe can easily be adapted for a round crockpot with multiple layering instead of a single layer.
